If a non-Christian consignee wishes me happy holidays during peak, and I, as a Christian, respond with Merry Christmas and they are offended, should I be disciplined?

If you don't know the consignee or their religious beliefs and your response is genuine then there should be no discipline.

If you do know the consignee and their religious beliefs and are in some way trying to impose your own you should be at least spoken to.
