Red Velvet Cupcakes


Ingredients:

1 package (18.25 ounce size) German chocolate cake mix
1 package (3.4 ounce size) vanilla instant pudding mix
1 cup sour cream
1/2 cup water
1/2 cup vegetable oil
1 bottle (1 ounce size) red food coloring
3 large eggs
1 cup miniature semisweet chocolate chips
24 paper liners for cupcake pans (2 1/2-inch size)



Directions:
Place rack in center of oven and preheat oven to 350 degrees F. Line 24 cupcake cups with paper liners. Set pans aside.

Place cake mix, pudding mix, sour cream, water, oil, food coloring and eggs in large mixing bowl. Blend with electric mixer on low speed for 30 seconds. Stop machine and scrape sides of bowl with rubber spatula. Increase mixer speed to medium and beat 2 minutes more, scraping sides again if needed. Batter should look thick and well-combined. Fold in chocolate chips.

Spoon or scoop 1/3 cup batter into each lined cupcake cup, filling three-quarters full. (You will get between 22 and 24 cupcakes; remove any empty liners.) Place pans in oven.

Bake cupcakes until they spring back when lightly pressed with your finger, 18 to 20 minutes. Remove pans from oven and place on wire racks to cool for 5 minutes. Run a dinner knife around the edges of the cupcake liners. Using end of knife, life cupcake up from bottoms of cups. Using fingertips, carefully pick them out of the cups.

Place on wire rack to cool for 15 minutes before frosting.

portercake (arthurs cake)
arthur of the famous arthur guinness and company in ireland

1 lb self raising flour
3/4 pint of guinness
1 egg
1 tsp mixed spice
1/2 lb sultanas
1/2 lb currants
1/2 lb sugar
steep the dry fruit and sugar in the guinness overnight.
add the flour and egg.
cook for approx 1 1/2 hours at 171 degrees

enjoy with a nice bit of butter spread on a slice

Texas Governor's Mansion Cookies

3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
1 1/2 cups butter, at room temperature
1 1/2 cups sugar
1 1/2 cups packed brown sugar
3 eggs
1 tablespoon vanilla
3 cups semi-sweet chocolate chips
3 cups old fashioned oats
2 cups sweetened flaked coconut
2 cups chopped pecans
  1. Heat oven to 350°F.
  2. Mix flour, baking powder, baking soda, salt and cinnamon in a bowl.
  3. In a very large bowl beat butter with electric mixer until smooth and creamy.
  4. Gradually beat in sugars, combine thoroughly.
  5. Add eggs one at a time beating after each addition.
  6. Add vanilla.
  7. Stir in flour mixture until just combined. Stir in chocolate chips, oats, coconut and chopped pecans.
  8. For each cookie drop ¼ cup dough onto an ungreased cookie sheet, place 3-inches apart.
  9. Bake 15-17 minutes, until edges are lightly browned, rotate sheets half-way through baking.
  10. Remove cookies from pans onto cooling racks.

Chocolate Coconut Pecan Pie

Ingredients:
3 cups sugar
7 tablespoons cocoa
1 stick melted butter or margarine
4 eggs
1 teaspoon vanilla
2 cups coconut (flaked)
1 dash salt
1 large can evaporated milk
2 cups chopped pecans
2 unbaked pie shells

Directions:
Mix ingredients in the order given except pie shells. Pour into unbaked pie shells. Bake at 350 F. for 40 minutes.

Fresh Berry Cake

Ingredients:
1 package Cake mix any brand
1 package Strawberry jello 4 oz. size
3 cups Fresh strawberries sliced
2 1/2 cups Miniature marshmallows
3/4 cup Sugar

Directions
1. Prepare batter for favorite 2 layer cake mix, set aside
2. Grease 13 x9" baking pan
3. Cover bottom of pan with sliced strawberries
4. Sprinkle berries with sugar
5. Sprinkle berries with jello
6. Cover berries with marshmallows
7. Pour prepared cake batter over all
8. Bake at 350 degrees for 40-50 minutes
9. Remove from oven and immediately invert onto serving tray.
10. ENJOY!

NOTE: very good with raspberries also

Apple Thingy

5 cortland apples, peeled and sliced
1/2 cup sugar
1/2 cup oil
3/4 cup flour
1 egg
1 teaspoon baking powder
1 teaspoon vanilla extract
sugar
cinnamon
  1. Preheat oven to 350.
  2. Placed sliced apples in an 8X8 oven safe dish.
  3. Sprinkle with sugar and cinnamon.
  4. Mix the remaining ingredients and spread over the top.
  5. Bake for 1 hour.

Rocky Road Fudge Brownies

Ingredients:
1 box (19.8 ounce size) brownie mix
1 cup chopped pecans
3 cups miniature marshmallows
2 squares (1 ounce size) unsweetened chocolate
1/3 cup milk
1/2 cup butter or margarine
1 package (16 ounce size) confectioners' sugar, sifted
1/2 teaspoon vanilla extract



Directions:
Prepare brownie mix according to package directions; stir in pecans. Spoon batter into a greased 13 x 9-inch baking pan. Bake at 350 degrees F for 25 minutes. Remove from oven and sprinkle miniature marshmallows over hot brownies.

Combine chocolate, milk and butter in a heavy saucepan. Cook over low heat until chocolate and butter melt, stirring often. Remove from heat. Transfer to a medium mixing bowl. Add confectioners' sugar and vanilla extract. Beat at low speed with an electric mixer until smooth. If frosting is too stiff for spreading consistency, add milk, 1 tablespoon at a time, stirring until smooth. Spread over brownies. Cool in pan on a wire rack, and cut into bars.

Coffee-Cream Cheese Frosting

Ingredients:
1 tablespoon instant coffee
1 tablespoon hot water
1 package (8 oz size) cream cheese, softened
4 1/2 cups powdered sugar



Directions:
Stir the instant coffee and hot water in a small bowl until well blended. Set aside.

Beat the cream cheese in a large bowl with mixer set on medium speed until light and fluffy. Gradually beat in the powdered sugar until well blended. Beat in the coffee mixture until well blended.

Cream cheese adds an intriguingly tangy note to this velvety frosting.

Decadent Choc. Bundt Cake

1 (18 ounce) box yellow cake mix
1 (3 ounce) box vanilla pudding mix
1 (3 ounce) box chocolate pudding mix
4 eggs
1 1/2 cups water
1/2 cup canola oil
1 (12 ounce) package chocolate chips
1 tablespoon flour
  1. Place chocolate chips in plastic baggy along with the flour. Shake well and set aside.
  2. Mix all ingredients in the order given. Pour into greased bundt or tube pan. Bake at 350 degrees for 50-60 minutes. Test with tootpick. Let cool for 10 minutes in pan and turn out onto cake platter.

Doggie Breath Busters Biscuits

Ingredients:
1 1/2 cup Whole wheat flour
1 1/2 cup Bisquick
1/2 cup Mint leaves -- lightly packed
1/4 cup Milk
4 tablespoons Margarine
1 Egg
1 1/2 tablespoon Maple or corn syrup



Directions:
Combine all ingredients in food processor, process until well mixed, mint is chopped, and a large ball forms.

Press or roll on non-stick surface (floured board or ceramic) to a thickness of 1/4-1/2". Cut into 1x2" strips or with bone-shaped cookie cutter and place on non-stick cookie pan.

Bake at 375 F for 20 minutes or until lightly browned. Cool and store in air-tight container.

Dark Moist Bran Muffins

2 cups whole wheat flour
1 1/2 cups bran
2 TBLS. sugar
1/4 tsp. salt
1 1/2 tsp. baking soda
1 3/4 cup buttermilk
1 egg slightly beaten
1/2 cup dark molasses
1 Tbls. melted butter
1 cup raisins (optional)

Preheat oven to 350*. Line muffin pan with paper liners. Combine flour, bran, sugar, salt and baking soda in mixing bowl; stir to combine. Add buttermilk, egg, molasses and butter. Stir together but do not overmix. Fold in raisins, if using. Spoon into prepared cups filling 2/3 full. Bake on middle rack of preheated oven 20-25 mins. or until toothpick inserted comes out clean.

Utah's All Berry Pudding Cake

CAKE
2 cups fresh berries in season
1 teaspoon ground cinnamon
1 teaspoon lemon juice
1 cup all purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 cup milk
3 tablespoons butter, melted

TOPPING
3/4 cup sugar
1 tablespoon cornstarch
1 cup boiling water

Toss the berries with cinnamon and lemon juice; place in a greased 8 inch square baking dish. In a bowl combine the flour, sugar and baking powder; stir in milk and butter. Slowly pour boiling water overall. Bake at 350 for 45 – 50 minutes or until the cake tests done. Yield 9 servings

NOTE: Can use frozen berries if fresh are out of season

Surprise Cupcakes Recipe

DescriptionThese cupcakes have a creamy surprise in the middle
!Ingredients -
8 ounces cream cheese, softened-
1/3 cup granulated sugar-
1 egg-
1 (16 ounce) package semisweet chocolate chips-
1 (18.25 ounce) box chocolate cake mix

Directions
1.Cream sugar and cream cheese together. Beat in egg. Stir in chocolate chips; set aside.
2.Prepare cake mix according to directions on box. Place paper baking cups into a muffin tin. Fill paper bake cups 2/3 full. Drop one rounded teaspoon of cheese mixture into each cup. Bake according to directions on cake mix box.

Mississippi Mud Cake & Frosting

1 cup pecans, chopped
1 cup butter
4 oz. semisweet chocolate, chopped
2 cups sugar
1 1/2 cups flour
1/2 cup unsweetened cocoa
4 large eggs
1 tsp. vanilla extract
3/4 tsp salt
1 (10.5oz.) bag mini-marshmallows
Choc. frosting

Place pecans in a single layer on a baking sheet. Bake at 350* for 8-10 mins. 'til toasted. Microwave 1 cup butter and semisweet chocolate in a glass bowl at high for 1 min., or 'til melted and smooth, stirring every 30 seconds. Whisk the sugar and the next 5 ingredients into chocolate mixture. Pour batter into a greased 15x10x1 jelly roll pan. Bake at 350 for 20 mins. Remove from oven and sprinkle evenly with mini-marshmallows. Bake 8-10 mins. more 'til golden brown. Drizzle warm cake with choc. frosting and sprinkle evenly with the pecans.

Choc. frosting
1/2 cup butter
1/3 cup unsweetened cocoa
1/3 cup milk
1 (16oz.) pkg. powdered sugar
1 tsp. vanilla
Stir together the first 3 ingredients in a med. saucepan over med. heat 'til butter is melted. Cook stirring constantly, 2 mins. or 'til slightly thickened. Remove from heat. Beat in powdered sugar and the vanilla at med. speed with elec. mixer 'til smooth

Apple Cream Cheese Muffins

Ingredients:

1 package (3 oz size) cream cheese softened
3/4 cup sugar
2 eggs
1/2 cup milk
1/4 cup butter or margarine, melted
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 1/2 cup all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup peeled diced tart apple
1/2 cup Bran Flakes
***Topping***
1 1/2 teaspoon sugar
1 teaspoon cinnamon



Directions:
Combine cream cheese, sugar, eggs, milk, butter, lemon juice and vanilla. Beat till smooth. Combine flour, baking powder, baking soda and salt; stir into cream cheese mixture just until moistened. Fold in apples and Bran Flakes.

Fill muffin cups and sprinkle tops with sugar and cinnamon mixture. Bake at 375?F for 20-25 minutes.

More,I dont read these often,but man some of them sound delicious.I`m not that big on sweets but my wife loves 'em. We recently found something that is decadent to both of us.You may even have posted it here before,but theres far too many to read them all.Its been around since the 1300's when people didn't waste anything.Its BREAD PUDDING.
The recipe I`m attatching is basic.Deb added caramel sauce to pour over it,but some folks use a butter bourban milk sauce.The limits are endless,allspice,cinnamen,cloves,vanilla,to make it to taste .Apprently, french bread works best.But cheap white bread tastes just fine.What surprised me most about this recipe is that although you use 2 eggs,you'd never know .
  • 3 slices day-old bread
  • 1 tablespoon butter, melted
  • 1/4 cup raisins (optional)
  • 2 eggs, beaten
  • 1 cup milk
  • 1/4 cup and 2 tablespoons white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
DIRECTIONS
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
  3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

DS.....you're right, the possibilities are endless. I use day (or more) old croissants from the bakery section of my store instead of stale bread. I tried coconut milk instead of regular milk and some coconut extract and made coconut bread pudding. Yummy!

Lemonade Muffins

Ingredients - 1 3/4 cups all-purpose flour-
1/4 cup granulated sugar-
2 1/2 teaspoons double-acting baking powder-
3/4 teaspoon salt-
1 egg, beaten well-
1/2 cup lemonade concentrate, thawed, undiluted-
1 teaspoon grated lemon, peel-
1/4 cup milk-
1/3 cup butter, melted-
1/2 cup chopped walnuts-
1/2 cup frozen lemonade concentrate, thawed, undiluted-
Granulated sugar

Directions 1.Sift together flour, the 1/4 cup sugar, baking powder and salt.
2.Combine egg, 1/2 cup lemonade concentrate, lemon peel, milk and butter. Add flour mixture; stir just until moistened. Stir in walnuts; do not over-beat. Fill paper-lined 2 1/2 x 1 1/2-inch muffin cups 2/3 full. Bake in 400 degree F oven for 20 to 25 minutes.
3.Remove from cups. Brush tops with 1/2 cup lemonade concentrate; sprinkle with sugar; serve warm.

Crustless Peach Pie

Filling

8 cups peaches, peeled and sliced
1/2 cup sugar (white or brown, both work) sub: Splenda
3 tablespoons cornstarch
2 teaspoons cinnamon (or to taste)
1 pinch nutmeg

Topping

1/4 cup butter 1/3 cup all-purpose flour 1/3 cup oat bran 1/4 cup additional oat bran
  1. Preheat oven to 400 degrees F.
  2. To make filling: Mix the sugar and the cornstarch and spices, add to the peaches and coat well. Place in baking dish. A 9" Pyrex pie dish works for me.
  3. To make strudel: Melt butter in a large bowl. Add sugar, flour, and 1/3 cup oat bran. Mix well until combined and crumbly. (you may want to taste test it's yummy.).
  4. Sprinkle 1/4 cup plain oat bran ontop of peaches, then the streudel.
  5. Bake at 400 for 20 min, then reduce to 350 and bake until it's done (the outside will be bubbly and the center will be crusty and golden brown).
