I've never seen anyone clean a fish that fast. I just recently got good enough to use an electric fillet knife exclusively saving me a lot of time.

I have a mister twister knife and the blades are junk.
I have a couple of Rapala fillet knives and for the life of me I can't get a great edge on them. When they were new you could shave with them. I like using my Mr. Twister electric knife on bigger fish.
I got this knife last year. Cleaned catfish with it once and it's dull as ever know. No idea how to sharpen a serated blade
