While it is Pennsylvania German tradition to eat pork and sauerkraut on New Year's Day, it is hardly a rigid one. You'll find as many recipes as cooks, but the reasons for the dish remain the same: good luck and good health.

You eat the pork because pigs root forward, and no one wants to be a chicken scratching backward on the first day of a new year. And sauerkraut (fermented or pickled cabbage) is thought to aid digestion and boost immunity, among other things.

I don't get fancy for this dish.......just in the crockpot.

3-4 lb pork roat (butt, shoulder) or spareribs or country style ribs. Salt & pepper the meat.
a can of beer (@12oz)
Cook for a few hours 'til meat is falling off bone.
During the last hour add 2 jars of kraut(rinsed & drained because it's too strong for me)

Serve with mashed potatoes and get an envelope of pork gravy!!
