Add the pinch of salt and stir. </p><p></p><p>For the filling, combine the cottage cheese, egg, salt, cinnamon, and sour cream until smooth. Add sugar to taste if desired. </p><p></p><p>Heat a skillet over medium heat and grease it if needed. Add the batter to create thin pancakes. Cook until the top bubbles then flip over and cook the other side until set (do not let them get too brown). </p><p></p><p>Remove them to a work surface and spread the filling in a thin layer over one side. Roll them up and place in a baking dish seam side down. Repeat with remaining batter and filling. </p><p></p><p>Spread the sour cream over the tops of the crepes in the baking dish and place in the oven.
