90/10 is about as much fat as I'll go and actually we prefer turkey burgers to beef.

I like mine more on the rare side. 90/10 is a bit dry for me. I like turkey burgers too. Just fresh not frozen. Bison burgers are my favorite.

Have never had a turkey burger fall apart on me. Add an egg and some bread crumbs. Freeze for a few hours and you're golden.
