There is no difference (basically) in the end.

CF is a CDN, which uses multiple servers around the world to store and serve third-party content closer to the end user to speed delivery of said content.
@cheryl and I use servers in our little datacenters to store and serve first and third party content for the end user.

It's an over-simplified version of what CF is, but that's what it is.

Is anyone actually entirely certain which of Cloudflare's services 8chan was using?

Very well might have just been some basic ddos protection. No shortage of white knights who'd nuke the site into oblivion if Cloudflare would just choose not to keep the botnets off of them.
