I've found tilapia to be kind of a bland tasting fish..it assumes whatever flavor you spice it up with.

That's what I like about it. Get to play with different spices and seasonings.

I like catfish but it has a bad reputation around here. Since its a bottom feeder it tastes like silt if caught around here. Store bought catfish is very good in comparison.

Over the Fourth I did some shrimp skewers. Did some with Thai peanut sauce and Teriyaki sauce. My favorite was my own creation of lime juice and green saracha.

Try some wrapped in bacon. Yummy.

Precook the bacon a bit if you like it more crispy. The shrimp will cook faster than the bacon. I use some foil to brown the bacon a bit first, then wrap and finish.
