Hawaiian Beef

Ingredients:1/3 cup firmly packed brown sugar
1/3 cup cider vinegar
1 can (8 ounce size) pineapple chunks, drained, reserve juice
3 tablespoons soy sauce
1 teaspoon finely chopped fresh garlic
2 tablespoons butter
1 1/2 pound round steak, cut into 1 1/2-inch pieces, trimmed
1 cup baby-cut carrots, halved crosswise
1 large onion, cut into 1-inch pieces
3 tablespoons cornstarch
3 tablespoons cold water
1 large green bell pepper, cut into bite-sized pieces
hot cooked rice, if desired
green onion slices, if desired

Directions:

Combine brown sugar, vinegar, reserved pineapple juice, soy sauce and garlic in small bowl; stir until sugar is dissolved. Set aside.

Melt 1 tablespoon butter in 12-inch skillet until sizzling; add half of steak pieces. Cook over medium-high heat, stirring occasionally, until browned (4 to 5 minutes). Place steak pieces in slow cooker. Repeat with remaining butter and steak pieces.

Add carrots and onion to slow cooker. Pour pineapple juice mixture over vegetables. Cover; cook on Low heat setting for 7 to 9 hours, or on High heat setting for 3 to 4 hours or until meat is tender.

Increase heat setting to High. Dissolve cornstarch in cold water in small bowl. Stir cornstarch mixture, pineapple chunks and green pepper into beef mixture.

Cover; continue cooking 30 minutes or until green pepper is crisply tender and juices are thickened. Serve over hot cooked rice and garnish with green onions, if desired.

Traditional Guacamole

"This guacamole uses the traditional ingredients of avocado, lemon juice, cilantro, and onion. Spice it up with jalapeno pepper if you like!"

Ingredients:

2 avocados, peeled and pitted
1 cup chopped tomatoes
1/4 cup chopped onion
1/4 cup chopped cilantro
2 tablespoons lemon juice
1 jalapeno pepper, seeded and minced
(optional)
salt and ground black pepper to taste

Directions:
1. Mash avocados in a bowl until creamy.
2. Mix tomatoes, onion, cilantro, lemon juice, and jalapeno pepper into mashed avocado until well combined; season with salt and black pepper.

Margarita Cake

Servings: 12
"A margarita - tequila, lime juice, triple sec - is baked into a cake mix."

Ingredients:
1 (18.25 ounce) package orange cake
mix
1 (3.4 ounce) package instant vanilla
pudding mix
4 eggs
1/2 cup vegetable oil
2/3 cup water
1/4 cup lemon juice
1/4 cup tequila
2 tablespoons triple sec liqueur

Glaze:
1 cup confectioners' sugar
1 tablespoon tequila
2 tablespoons triple sec liqueur
2 tablespoons lime juice

Directions:
1. Preheat oven to 350 degrees friend (175 degrees C). Grease and flour a 10 inch Bundt pan.
2. In a large bowl combine cake mix, pudding mix, eggs, oil, water, lemon juice 1/4 cup tequila and 2 tablespoons triple sec. Beat for 2 minutes.
3. Pour batter into prepared pan. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan for 10 minutes; remove to rack and pour glaze over cake while still warm.
4. To make the glaze: In a small bowl, combine confectioners' sugar with 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth.

Ranch Pork Chops in the Crock-Pot (pork chops, ranch packet, cream of chicken soup, 1 can water) ~ Cook on low for 4 to 6 hours.

CHIPOTLE GUAC.


This is all you’ll need:
  • 2 ripe Hass avocados (In the restaurant, we use 48 per batch, multiple times per day)
  • 2 tsp lime juice
  • 2 tbsp cilantro (chopped)
  • 1/4 cup red onion (finely chopped)
  • 1/2 jalapeño, including seeds (finely chopped)
  • 1/4 tsp kosher salt
How to do it:

1. Choose the right avocado. It should feel squishy yet firm (like the palm of your hand), and be a nice dark green color on the inside.
2. Cut the avocado in half and the remove the pit (carefully!)
3. Scoop the avocados and place in a medium bowl.
4. Toss and coat with lime juice.
5. Add the salt and using a fork or potato masher, mash until a smooth consistency is achieved.
6. Fold in the remaining ingredients and mix well.
7. Taste the guacamole (over and over) and adjust seasoning if necessary.

Orange Cake

Ingredients

Cake:
1 package of instant lemon pudding
1 box of yellow cake mix
3 eggs
3/4 cup of oil (canola or vegetable)
1 cup of water

Glaze:
2 cups powdered sugar
2 tablespoons butter
1/3 cup + 2 tablespoons of orange juice

Recipe
1) Preheat the oven to 350 degrees.
2) Mix all the cake ingredients together. Stir well and pour into a 13-inch by 9-inch cake pan.
3) Bake for 35-40 minutes. Be careful not to brown the top of the cake.
4) While the cake is baking, mix all the ingredients for the glaze together.
5) Remove cake from oven and poke all over with the tines of a fork.
6) Pour the glaze all over the cake.

Eat warm or cooled for breakfast, lunch, dinner and tea time.

(Personally, I would remove the garlic before it got "golden". The flavor will be there.)

Angel Hair Pasta in Garlic Sauce

1 package (16 ounces) capellini (angel hair) pasta
1/4 cup olive or vegetable oil
1/4 cup chopped fresh parsley
4 cloves garlic, finely chopped
1/2 cup freshly grated Parmesan cheese
Freshly ground pepper


Cook pasta as directed on package.

While pasta is cooking, heat oil in 10-inch skillet over medium-high heat.

Cook parsley and garlic in oil, stirring frequently, until garlic is
golden. Drain pasta; mix with garlic mixture. Sprinkle with cheese. Serve
with pepper.

Makes 6 servings

I made this tonight. Had a bunch of mushrooms to use up.....it came out great!!

Mushroom Soup (Wolfgang Puck)
Ingredients
  • 1 pound firm white mushrooms, cleaned
  • 1 medium lemon
  • 1 tablespoon unsalted butter
  • 2 tablespoons minced shallots
  • 1/4 teaspoon dried thyme
  • 1/2 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 2 cups heavy cream
  • 1 1/2 cups chicken stock
  • 1 teaspoon cornstarch, dissolved in 1 tablespoon of water
  • 1 tablespoon minced parsley
Directions
Sprinkle the mushrooms with lemon juice. In a food processor, coarsely chop them.

Melt the butter in a heavy saucepan and lightly saute the shallots. Add the mushrooms, thyme, and bay leaf and saute over moderate heat for 10 minutes, or until the liquid disappears. Add the salt, pepper, cream, and chicken stock and bring to a boil. Reduce the heat and simmer for 20 minutes.

Add the cornstarch to the soup and continue to simmer 10 minutes longer, stirring constantly. Correct seasoning to taste.

Serve in warm bowls. Sprinkle with minced parsley.

Pork Chops with coffee dry rub

Ingredients
  • 4 teaspoons chili powder
  • 4 teaspoons ground coffee
  • 2 tablespoons dark brown sugar
  • 4 teaspoons salt
  • 6 medium, bone-in pork chops about 1-inch thick
  • ¼ teaspoon turmeric
  • ¼ teaspoon ground coriander
  • ¼–½ teaspoon cayenne pepper
  • ½ teaspoon freshly ground pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
Instructions
In a small bowl, combine all the ingredients and stir until well blended. Preheat the grill.

Generously rub both sides of the pork chops with the coffee rub. Grill the pork chops for about 5 to 7 minutes on each side over a medium heat.

Let the chops rest covered with aluminum foil before serving. Discard any unused rub.

Cowboy Stew

Ridin’ the range all day makes a cow poke mighty hungry–try this one on for size.

2 lbs. hamburger meat,browned
1 large onion,chopped
1 can tomatoes
1 can Ro-Tel tomatoes and jalapenos
1 can Ranch Style beans with jalapenos
1 can whole kernel corn
3-4 cut potatoes

1 tbsp chili powder
several dashes hot pepper sauce
1 tsp. cumin
several dashes salt and pepper to taste
a little water


(*”greenhorns” *smile* can use plain Ranch Style beans, if they can’t take the heat)

Combine all ingredients in a cast iron Dutch oven (for authentic Texas-style cookin’, y’all). Cook over low heat (or campfire) until potatoes are fork-tender. Serve in bowls with grated Monterrey Jack cheese and chopped green onions, if desired. Good with cornbread or sourdough biscuits, too. Serve 6–or 4 hungry cowboys.

Oven Porcupines

1/2 lb. Ground Beef
1/4 C. Uncooked Reg. White Rice
1/4 C. Water
2 2/3 Tbsp. Onion, chopped
1/2 tsp. Salt
1/4 tsp. Celery Salt
1/2 tsp. Garlic Powder
1/4 tsp. Pepper

1 8oz can Tomato Sauce
1/2 C. Water
1 tsp. Worcestershire Sauce


Heat oven to 350 degrees.
Mix meat, rice, water, onion, salts, garlic powder and pepper.
Shape mixture by rounded tablespoonfuls into balls. Place meatballs in ungreased baking dish.
Stir together remaining ingredients; pour over meatballs.
Cover with aluminum foil; bake 45 minutes. Uncover and bake 15 minutes longer

Just spotted this thread - love new recipes. I personally like Mr. Food.com site. Majority of the recipes are add this, this, etc. and bake or whatever. Easy to use. Our current family favorite from Mr. Food:

Cherry Crumble (or you can use another fruit)

3/4 cup quick-cooking oats, uncooked
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/3 cup cold butter, cut into pieces (I melt my butter)
1 - 21-oz can cherry pie filling
1/2 teaspoon almond extract
Vanilla ice cream

Grease a 1-quart microwave-safe baking dish. Combine pie filling and almond extract and put in this bowl. Take another mixing bowl -melt your butter and add the oats, flour, sugar to the butter mixture- Mix it up until its crumbly. Then sprinkle crumb mixture on top of the pie filling/extract mixture.
Microwave, UNCOVERED, at HIGH for 6 minutes or until thoroughly heated. Top each serving with ice cream or Reddi-Whip

Serves 4 - prep time is about 5 minutes

Dollar Tree carries the cherry pie filling and other ones. Pie filling is usually around $3 at a regular store in my neck of the woods - so glad I found the pie filling cheaper.

Do you find seeds in your canned cherry pie filling? I do almost every time.
I would like to try this with apple or berry or peach.

Haven't found in the ones I've picked up. So far, we've made apple, red raspberry, blueberry and the cherry. Found some strawberry pie filling at a Walmart Neighborhood store - anxious to try that one out.
