Hawaiian Kebabs

Serves/Makes: 6 | Difficulty Level: 3 | Ready In: < 30 minutes

Ingredients:
1 1/2 pound beef strips
1 onion, peeled and cut into 1-inch pieces
1 green bell pepper, seeded and cut into 1-inch pieces
8 ounces pineapple chunks, drained, juice reserved (canned or fresh)
18 cherry tomatoes
1/3 cup honey
2 tablespoons firmly packed brown sugar
1 tablespoon garlic powder
1 teaspoon Worcestershire sauce
1/8 teaspoon ground black pepper

Directions:
Preheat grill. Thread beef, onion, bell pepper, pineapple and tomatoes alternately on skewers.

In a small bowl combine reserved pineapple juice, honey, brown sugar, garlic powder, Worcestershire sauce and pepper. Stir until sugar is dissolved; set aside.

Grill kebabs for 18 to 22 minutes, turning often, while brushing on marinade every 3 to 4 minutes.

Low-Country Shrimp Pilaf

Ingredients:

1 1/2 tablespoon canola oil
1 1/2 cup chopped green bell pepper
1 cup chopped onion
1 package (8 ounce size) sliced fresh mushrooms
1 tablespoon minced garlic
2 teaspoons Old Bay seasoning
1 pound peeled and deveined large shrimp
1/2 cup dry white wine
1 bottle (8 ounce size) clam juice
1 1/2 cup instant white rice
2 tablespoons chopped fresh thyme, divided
1 can (14.5 ounce size) diced tomatoes with jalapenos, undrained

Directions:
Heat oil in large nonstick skillet over medium-high heat. Add bell pepper, mushrooms and onion to pan; saute 2 minutes. Add garlic and Old Bay seasoning to pan; saute 1 minute. Add shrimp, wine, and clam juice; bring to a boil. Stir in rice; cover and remove from heat. Let stand 5 minutes or until liquid is absorbed.

Place pan over medium-high heat. Stir in 1 tablespoon thyme and tomatoes; cook 2 minutes or until thoroughly heated, stirring occasionally. Sprinkle with remaining 1 tablespoon thyme.

Aloha Chicken Salad
This is so simple.........
  • 4 cups chopped cooked chicken
  • 2 cups diced celery
  • 1 cup mayonnaise or Miracle Whip
  • 20-ounce can pineapple chunks, drained
  • 1 cup chopped pecans
  • 2 11-ounce cans mandarin oranges, drained
  • 1 pound seedless green grapes
Combine all ingredients in a large bowl. Toss until well mixed. Chill.

Beef Kebabs Using bamboo or wooden skewers instead of metal will help keep the steak from getting overcooked on the inside. Metal transfers heat, so is useful to use for chicken, or a meat that you want to cook all the way through, but not so useful for steak that you want done rare or medium rare.

Ingredients

Marinade Ingredients:
  • 1/3 cup olive oil
  • 1/3 cup soy sauce
  • 3 Tbsp red wine vinegar
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 Tbsp minced fresh ginger
  • Freshly ground black pepper to taste
Kebab Ingredients:
  • 1 1/2 lbs top sirloin steak, cut into 1 1/2-inch cubes
  • 1 large bell pepper
  • 1-2 medium red onions
  • 1/2 to a pound button mushrooms
  • About 20 bamboo or wooden skewers
  • Method:
  • 1 Mix the marinade ingredients together in a bowl and add the meat. Cover and chill in the fridge for at least 30 minutes, preferably several hours or even overnight. (Heck, I've kept the meat marinating for a couple days, still great.)
    2 Soak the skewers in water for at least 30 minutes before grilling. This will help prevent them from completely burning up on the grill.
    3 Cut the vegetables into chunks roughly the width of the beef pieces. Taking care not to poke yourself, thread the meat and vegetables onto double bamboo skewers. One way to do this safely is to put the piece that you are trying to pierce on a cutting board, and then push the skewers through the piece to the board. Using double skewers will help you turn the kebabs on the grill. If you keep a little space between the pieces, they will grill more evenly. Paint the kebabs with some of the remaining marinade.
    3 Prepare your grill for high, direct heat. Grill for 8 to 10 minutes, depending on how hot your grill is, and how done you would like your meat, turning occasionally. Let rest for 5 minutes before serving.

Corn Casserole

Ingredients
  • 1 box of Jiffy brand corn muffin mix
  • 1 egg
  • 1 stick of butter (softened or melted)
  • 8 ounce of sour cream
  • 1 can of whole kernel corn (drained)
  • 1 can of creamed corn
Method:

Preheat oven to 350 friend.
Mix all ingredients together and stir until smooth.
Coat a 9 x 9 baking pan with non-stick cooking spray.
Pour mixture into the pan and cover with aluminum foil.
Bake for 30 minutes.
Remove foil. Bake uncovered for an additional 30 minutes.
Done!
Yields: 4 servings
Prep time: 10 minutes
Cook time: 1 hour

Variations:
Experiment with adding one or more of the following ingredients:
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup jalapeno peppers, diced
  • 1/4 cup chilies, diced
  • 2 Tbsp honey
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1 pound cooked meat of any kind (ground beef, chicken, shrimp, steak, etc.)

Meat Balls And Potatoes In A Skillet

Ingredients:

1 pound ground beef
2/3 cup uncooked rolled oats
1 medium onion, chopped
1 teaspoon salt
1 dash pepper
2/3 cup evaporated milk
2 tablespoons flour
1/4 cup shortening or margarine
5 large thinly sliced raw potatoes
2 medium onions, sliced
1 1/2 cup boiling water
2 teaspoons salt
1/4 teaspoon pepper

Directions:
Place ground beef, oats, chopped onion, 1-teaspoon salt, dash of pepper and evaporated milk in a mixing bowl. Mix together lightly but thoroughly.

Divide meat mixture in 12 portions and shape into balls; roll them in the flour to coat well.

Melt shortening in a very large frying pan. Add meatballs and brown on all sides over medium heat. When meatballs are well browned add potatoes, sliced onion, boiling water and the 2-teaspoons salt and 1/4-teaspoon pepper.

Cover frying pan tightly with a lid, then cook over medium heat until potatoes are tender, about 20 minutes.

Gourmet Beef-Noodle Casserole

Ingredients:

1 pound ground beef
1 can (14.5 ounce size) diced tomatoes
1 can (8 ounce size) tomato sauce
1/2 cup green bell pepper, chopped
1 can (4 ounce size) sliced mushrooms, drained
1 clove garlic, chopped
2 teaspoons salt
2 teaspoons sugar
1/2 cup burgundy wine or beef broth
1 package (8 ounce size) cream cheese, softened
1 cup sour cream
1/3 cup onion, chopped
2 cups shredded Cheddar cheese, divided
1 package (8 ounce size) wide egg noodles, cooked

Directions:
Brown ground beef in a skillet; drain. Add tomatoes, sauce, green pepper, mushrooms, garlic, salt, sugar, and wine or broth; cover and simmer over low heat for 10 minutes.

In a medium bowl, blend cream cheese, sour cream, onion and one cup Cheddar cheese; set aside.

In an ungreased 13x9 inch baking pan, layer half the beef mixture, half the noodles and half the cheese mixture; repeat layers. Top with remaining Cheddar cheese. Bake, uncovered, at 350 degrees friend for 40 minutes.

Now, these look awesome and I'll need to try them out 1 day..... but I would choose ground beef over ground pork in this recipe :

Meatloaf cupcakes with mashed potato frosting

Preparation time: 10 minute(s)
Cooking time: 30 minute(s)


Ingredients:
  • 300 g. of ground pork
  • 1 onion, chopped
  • 3 cloves of garlic, grated
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 18 onion leaves, finely sliced
  • 1/2 c. of panko (Japanese bread crumbs)
  • 1 and 1/2 tsp. of Kosher salt
  • 1/2 tsp. of freshly milled black pepper
  • 1 and 1/2 c. of mashed potatoes (get the recipe; just adjust the amount of ingredients to come up with a cup and a half of mashed potatoes)
  • softened butter for greasing
Instructions:
  • Preheat the oven to 350F.
  • Take three ovenproof ramekins (3/4 cup capacity) brush the inside with butter.
  • In a bowl, mix together all the ingredients except the mashed potatoes.
  • Divide the meatloaf mix evenly among the three ramekins.
  • Bake the meatloaf cupcakes at 350F for 20 minutes.
  • Take the ramekins out of the oven.
  • Switch the oven heat to broil (top heat on) and turn up the temperature to 425F.
  • Invert the meatloaf cupcakes onto a plate (they should come out easily since they would have shrunk and pulled away from the sides during baking).
  • Re-invert the meatloaf cupcakes to their proper position and arrange on a baking dish.
  • Using an ice cream scoop, top the meatloaves with mashed potatoes (see notes below). Use a spatula to spread the mashed potato all the way to the edges of the top of the meatloaf cupcakes.
  • Broil the meatloaf cupcakes for five to seven minutes or just until the mashed potato “frosting” is lightly browned in spots.
  • Serve the meatloaf cupcakes with mashed potato frosting on beds of lettuce.
Quick notes:
I recommend adding chopped parsley to the mashed potatoes.
You may use a piping bag to “frost” your meatloaf cupcakes.

Country-Style Smashed Potato Salad

What You Need............

3 lb.Yukon gold potatoes (about 6 large), peeled, cut into 1-inch chunks


4 hard-cooked eggs, divided


3 green onions, thinly sliced


1 stalk celery, chopped


6 radishes, thinly sliced


2 Tbsp. Sweet Pickle Relish


3/4 cupMIRACLE WHIP Dressing


1 Tbsp. white wine vinegar


1/2 tsp.paprika



Make It...............

COOK potatoes in boiling water in saucepan 10 to 15 min. or until very tender; drain well. Transfer to large bowl; cool 5 min. Meanwhile, chop 3 eggs; slice remaining egg.
ADD chopped eggs, vegetables and relish to potatoes; mix lightly. Mix dressing and vinegar. Add to potato mixture; mix well.
SPRINKLE with paprika; top with egg slices.

Hearty Beef And Corn Casserole

Ingredients:
***BUTTERED BREADCRUMB TOPPING***

2 slices bread
2 tablespoons butter
2 tablespoons chopped parsley

***NOODLES***

8 ounces extra-wide egg noodles
water, lightly salted (for cooking noodles)
1 tablespoon oil

***BEEF MIXTURE***

1 pound lean ground beef
1 medium onion, chopped
1/2 teaspoon dried basil
1 can (12 ounce size) whole-kernel corn, well drained
1 can (10.5 ounce size) condensed cream mushroom soup
1 cup dairy sour cream, at room temperature
1/4 cup chopped pimento
3/4 teaspoon salt
1/2 teaspoon pepper

Directions:

Tear bread into pieces into blender jar. Blend until crumbly.

Melt butter in small skillet over medium heat. Toss crumbs in butter until lightly browned. Remove from heat and stir in parsley. Set aside.

Preheat oven to 375 degrees friend.

Cook noodles in boiling salted water according to package directions, adding the oil to the water. Drain and set aside.

While noodles are cooking, brown beef with onion and basil in large skillet over medium heat; drain excess fat. Stir in corn, undiluted soup, sour cream, and pimento, salt and pepper. Fold in noodles.

Pour mixture into a 9x13-inch baking dish. Sprinkle with the buttered bread crumbs. Bake for 30 minutes until bubbly. Let stand 10 minutes before serving.

Manicotti in Cream Sauce with Chicken and Ham Filling

Ingredients:

***SAUCE***
1/4 cup butter
1 clove garlic, crushed
1/4 cup flour
1 1/2 teaspoon instant chicken bouillon
1/8 teaspoon pepper
2 cups half & half
1/2 cup grated Parmesan cheese
1/2 cup grated Romano cheese

***MANICOTTI***
8 manicotti shells
2 tablespoons butter
3 tablespoons sliced green onions
1 package (10 oz. size) frozen, chopped spinach, thawed & drained
1 cup finely chopped cooked chicken
1 cup finely chopped cooked ham
1/2 cup grated Parmesan cheese
1/2 cup grated Romano cheese
2 eggs, beaten
3/4 teaspoon Italian seasoning
1/4 teaspoon pepper

Directions:
FOR SAUCE: Saute garlic in butter 3 minutes. Stir in flour and seasonings. Remove from heat. Gradually stir in cream. Bring to a boil over medium heat, stirring constantly. Boil and stir 1 minute. Reduce heat to low. Stir in cheese until melted; set aside.

FOR MANICOTTI: Parboil shells, rinse and drain.

Saute onion in butter until tender, about 3 minutes. Remove from heat; stir in remaining ingredients.

Preheat oven to 350 degrees friend.

Fill shells. Place in buttered 2-quart baking dish. Spoon sauce over filled manicotti.

Bake 20 minutes. Then broil several inches from source of heat, about 5 minutes or until sauce is golden and bubbles. Serve immediately.

Memphis style Mac. 'n' Cheese

What You Need

1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner


1/2 lb. lean ground beef


1/2 cup finely chopped onions


2 cloves garlic, finely chopped


1/2 cup BULL'S-EYE Memphis Style Barbecue Sauce


2 slices OSCAR MAYER Bacon, cooked, crumbled


1 green onion, sliced



Make It



COOK Macaroni as directed on package. Meanwhile, brown meat with onions and garlic in large skillet; drain.
ADD macaroni, Cheese Sauce and barbecue sauce to meat mixture in skillet; stir. Cook 2 to 3 min. or until heated through, stirring occasionally.
TOP with bacon and onions.
