Perfect Roast Chicken


The Barefoot Contessa Cookbook

  • 1 5- to 6-pound roasting chicken
  • Kosher salt
  • Freshly ground black pepper
  • 1 large bunch fresh thyme
  • 1 lemon, halved
  • 1 head garlic, cut in half crosswise
  • 2 tablespoons butter, melted
  • 1 Spanish onion, thickly sliced
  • 1 cup chicken stock, preferably homemade
  • 2 tablespoons all-purpose flour
Preheat the oven to 425 degrees.

Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the chicken in a large roasting pan. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of the lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Scatter the onion slices around the chicken.

Roast the chicken for 1-1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove to a platter and cover with aluminum foil while you prepare the gravy.

Remove all the fat from the bottom of the pan, reserving 2 tablespoons in a small cup. Add the chicken stock to the pan and cook on high heat for about 5 minutes, until reduced, scraping the bottom of the pan. Combine the 2 tablespoons of chicken fat with the flour and add to the pan. Boil for a few minutes to cook the flour. Strain the gravy into a small saucepan and season it to taste. Keep it warm over a very low flame while you carve the chicken.

Slice the chicken onto a platter and serve immediately with the warm gravy.

Ingredients
  • 1/2 cup melted butter
  • 1 cup brown sugar , packed
  • 1 (20 ounce) cans pineapple rings , drained
  • 1 (18 1/2 ounce) boxes yellow butter recipe cake mix
  • 3 eggs
  • 1 1/3 cups whole milk
  • 1/3 cup canola oil
Directions
  1. Preheat oven to 350° .
  2. Pour melted butter in 13 x 9 pan .
  3. Sprinkle on the brown sugar.

  1. Lay the pineapple rings evenly over the brown sugar. If there are any left break into pieces and fill in the spaces in the pan .
  2. Combine cake mix, eggs, milk and oil and mix well with an electric mixer for two minutes on medium speed until batter is smooth .
  3. Pour batter evenly over pineapple and brown sugar.
  4. Bake in preheated oven for 35 minutes or until cake tests done .
  5. Let cake cool in pan for 30 minutes .
  6. place cake platter over pan and invert cake onto cake platter.

Emeril's Chicken Fried Steak

Serves/Makes: 4 | Ready In: < 30 minutes

Ingredients:
1 cup vegetable oil
1 pound round steak, cut into 4 ounce pieces
salt
freshly ground black pepper
1 egg, beaten
3 tablespoons milk, PLUS
3 cups milk
1 1/2 cup all-purpose flour, PLUS
3 tablespoons all-purpose flour

Directions:
Heat the oil to 360 degrees friend in a large, heavy skillet.

Pound the round steak to tenderize it. Season with salt and pepper.

Beat the egg with the first measure of milk.

Place first measure of flour in a shallow plate and season with salt and pepper.

Dredge each piece of steak in the flour, shaking off any excess. Dip the meat in the egg wash and let any excess drip off then dredge again in the seasoned flour.

Fry the steaks in the hot oil until golden brown on each side, about 3-4 minutes. Remove and drain well on paper toweling.

Pour off all but 1/4 cup of the oil in the pan. Over medium heat, stir in the second measure of flour and cook, stirring, for 3-4 minutes.

Add the remaining milk 1/2 cup at a time, whisking constantly. Bring the milk to a boil then reduce the heat to medium low for 8-10 minutes, stirring frequently, until thick. Season to taste with salt and pepper or Old Bay seasoning.

Serve the chicken fried steak with the cream gravy.

5-Minute Cold Sesame Noodles

Ingredients

  • 1½ cups fresh pasta or Chinese wheat noodles

  • 2 tablespoons balsamic vinegar

  • 3 tablespoons brown sugar

  • 3 tablespoons light soy sauce or 2 tablespoon Braggs liquid aminos

  • 5 tablespoons sesame oil

  • 1 tablespoon sesame paste (can substitute tahini or peanut butter)
Directions

  1. Cook noodles to al dente, then run them under cold water to chill the noodles.

  2. Toss chilled noodles with a bit of sesame oil to prevent them from sticking. Place in fridge.

  3. To make the dressing, combine vinegar, brown sugar, soy sauce and sesame paste, then slowly whisk in the sesame oil.

  4. Toss noodles in dressing.

  5. Optional: Garnish with sesame seeds, scallions or cilantro.

Broccoli Pepper Macaroni

Prep: 5 min - Total: 20 min

1 pkg. (7.25 oz.) KRAFT THICK 'N CREAMY Macaroni & Cheese Dinner
1 cup frozen chopped broccoli, cooked, drained
1/4 cup chopped green pepper
1/4 cup chopped red pepper
1/8 tsp. dill weed (optional)


Prepare Dinner as directed on package.

Stir in remaining ingredients.

Spaghetti Pie

Prep: 30 min - Bake: 25 min

4 ounces uncooked dried spaghetti
1/2 pound bulk Italian sausage
1 cup spaghetti sauce
3/4 cup LAND O LAKES® Sour Cream
4 ounces (1 cup) LAND O LAKES® Mozzarella Cheese, shredded
1 egg
1/4 cup freshly grated Parmesan cheese


Heat oven to 375°friend. Cook spaghetti according to package directions; drain.

Meanwhile, in 10-inch skillet brown sausage; drain off fat. Stir in spaghetti sauce. Cook over medium heat 3 minutes.

In medium bowl stir together 1/2 cup Mozzarella cheese, sour cream and egg; stir in spaghetti. Place spaghetti mixture in 9-inch pie pan; sprinkle with remaining Mozzarella cheese. Spread sausage mixture over entire surface.

Cover with aluminum foil; bake for 25 to 35 minutes or until heated through. Remove aluminum foil; sprinkle with Parmesan cheese. Let stand 10 minutes before serving. To serve, cut into wedges.

TIP:If desired, add drained canned sliced mushrooms or sliced ripe olives to spaghetti sauce.

TIP:Substitute 9-inch square baking pan. Bake for 25 to 35 minutes.

Green Bean Casserole
Ingredients.

    can (10 1/2 ounces) Campbell's® Condensed Cream of Mushroom Soup or Campbell's® Condensed 98% Fat Free Cream of Mushroom Soup

  • 1/2
    cup milk

  • 1
    teaspoon soy sauce

  • 1
    dash black pepper

  • 4
    cups cooked cut green beans

  • 1 1/3
    cups French's® French Fried Onions

How to Make It
Step 1
Stir the soup, milk, soy sauce, black pepper, beans and 2/3 cup onions in a 1 1/2-quart casserole.

Step 2
Bake at 350°friend. for 25 minutes or until the bean mixture is hot and bubbling. Stir the bean mixture. Sprinkle with the remaining onions.

Step 3
Bake for 5 minutes or until the onions are golden brown.

  • For the cooked green beans: Use 1 bag (16 to 20 ounces) frozen green beans, thawed, 2 packages (9 ounces each) frozen green beans, thawed, 2 cans (14.5 ounces each) green beans, drained or about 1 1/2 pounds fresh green beans for this recipe

How to Make Buttermilk Quickly :

This is a really easy method. Just add one tablespoon of lemon juice or vinegar to one cup of milk, and let it sit out at room temperature for about ten minutes. If you need more than a cup, just keep the ratios the same. For two cups, use two cups of milk and two tablespoons of lemon juice or vinegar.
