I have IBD so I eat a paleo lifestyle. This is my favorite chocolate chip cookie recipe hands-down, whether you're into healthy eating or full-blown full-fat full-flavor. But dammit, they are GOOD for you!!!!!

2 cups almond flour

¼ tsp sea salt

½ tsp baking soda (aluminum-free)

¼ cup coconut oil

2 Tbsp organic honey

1 Tbsp vanilla extract

½ cup chocolate chips or chunks




Combine almond flour, salt and baking soda in a food processor. Add in coconut oil, honey & vanilla and pulse until combined and a dough consistency forms. Take out the blade and mix in your chocolate by hand.

Form tablespoon-sized balls, flatten them and place on a cookie sheet lined with parchment.

Bake at 350 for approx. 8 minutes and let them stand to cool for at least 15 minutes before moving them.

Double Mocha Layer Cake

What You Need

cup hot water

tsp. MAXWELL HOUSE Instant Coffee, divided

pkg. (2-layer size) chocolate cake mix

pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding

eggs



1/3
cup oil



4
oz. BAKER'S Semi-Sweet Chocolate, divided

pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

jar (7 oz.) JET-PUFFED Marshmallow Creme

tub (10.6 oz.) COOL WHIP Chocolate Whipped Frosting, thawed




Make It

HEAT oven to 350°friend.
LINE 13x9-inch pan with foil, with ends of foil extending over sides; spray with cooking spray. Add hot water to 2 tsp. coffee granules in large bowl; stir until dissolved. Add cake mix, dry pudding mix, eggs and oil; beat with mixer until blended. Pour into prepared pan. Bake 30 to 33 min. or until toothpick inserted in center comes out clean. Cool completely.
MELT 2 oz. chocolate as directed on package. Add to cream cheese, marshmallow creme and remaining coffee granules in large bowl; beat with mixer until blended.
USE foil handles to lift cake from pan; cut crosswise in half. Stack cake layers on plate, spreading cream cheese mixture between layers. Spread frosting onto top and side of cake. Melt remaining chocolate; drizzle over cake.

Pistachio Bars
What You Need

OREO Cookies, finely crushed (about 3 cups)

pkg. (3.4 oz. each) JELL-O Pistachio Flavor Instant Pudding

cups cold milk

tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

cup toffee bits




Make It

MIX cookie crumbs and butter until blended; press onto bottom of 13x9-inch pan. Refrigerate until ready to use.
BEAT pudding mixes and milk in large bowl with whisk 2 min.; spread 1-1/2 cups onto crust. Stir half the COOL WHIP into remaining pudding; spread over pudding layer in pan. Cover with remaining COOL WHIP.
REFRIGERATE 4 hours or until firm. Sprinkle with toffee bits just before serving.

Substitute
Substitute chopped PLANTERS Dry Roasted Pistachios for the toffee bits.

Cherry-Pecan Bars

These are so good you'll want to double the recipe.


  • 1-1/4 cups sifted all-purpose flour, divided
  • 1/4 cup confectioners' sugar
  • 1/2 cup cold butter, cut into small pieces
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 2 eggs, lightly beaten
  • 1/2 cup maraschino cherries, finely chopped
  • 1/2 cup flaked coconut
  • 1/2 cup chopped pecans
Preheat oven to 350°friend.

Sift together 1 cup of the sifted flour with the confectioner's sugar. Cut in the butter until mixture reaches consistency of coarse meal. Press mixture firmly into the bottom of an ungreased 11x7-inch or 9x9-inch pan. Bake at 350°friend for 10 minutes. Remove from oven.

While first layer bakes, sift together the remaining 1/4 cup of flour, baking powder, salt and sugar. Add the eggs, and mix well. Fold in the maraschino cherries, coconut and pecans. Spread mixture over the partially-baked first layer.

Return pan to oven and bake at 350°friend for 30 to 40 minutes. Cool. Cut into bars or squares. Makes about 3 dozen bars.

Upside Down. Orange French Toast
Ingredients :
    • 1/2 cup melted butter
      1/2 cup sugar
    • 1/4 cup chopped pecans
      2 tablespoons grated orange
    • peel
    • 2 teaspoons ground cinnamon
    • 12 slices French bread,
      sliced 3/4 inch thick
    • 4 ounces cream cheese,
      softened and cubed
    • 8 eggs
    • 1 cup orange juice
    • 1 tablespoon orange
      liqueur (optional)
    • 1/2 teaspoon butter
      flavoring



Directions

  1. Place melted butter in a 9
    by 13 inch baking dish. Combine the sugar, pecans, orange peel, and
    cinnamon;sprinkle over the butter. Arrange bread in the baking dish. Dot with
    cream cheese. In a large bowl, whisk the eggs, orange juice, orange liqueur, and
    butter flavoring. Pour over the bread. cover and refrigerate overnight. Remove
    from the refrigerator 30 minutes before baking. Bake uncovered at. 325 degrees
    for 25-30 minutes, or until a knife inserted in the center comes out clean. To
    serve, invert slices onto plate.

My Grandmother's Apple Cake

"My Grandmother's Apple Cake"
1/2 cup butter
    • 1/2 cup all-purpose flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 lb baking apples
    • 3/4 cup sugar
    • 2 eggs
Preheat the oven to 350°friend Melt the butter in
  1. a small saucepan or in a non-metallic bowl set in the microwave. Grease a
    nonstick 8-inch round cake pan (not springform) with 1 tablespoon of the butter
    using a pastry brush or paper towel.
  2. Combine the flour, baking powder, and salt in
    a small mixing bowl. Wash, peel, and core the apples. Cut them in eighths and
    arrange over the bottom of the pan.
  3. In a medium mixing bowl, whisk the sugar
    with the eggs until fluffy. Add the flour mixture and whisk until combined. Add
    the melted butter and whisk again until blended. Pour the batter evenly over the
    fruit and bake for 40 minutes, until the top is set and golden brown.
  4. Let the cake settle on a cooling rack for 10
    minutes. Run a knife around the pan to loosen and flip the cake onto a plate; if
    any piece of fruit has stuck to the bottom of the pan, scrape it off carefully
    and place it back on the cake where it belongs. Flip the cake again onto a
    serving plate - work cautiously so as not to squish the cake between the two
    plates. Let cool and serve slightly warm or at room temperature.

Oatmeal Apple Raisin
Muffins


1 egg, beaten
3/4 c. skimmed milk
1 c.
raisins
1 c. chopped apple
1/2 c. oil
1 c. flour
1 c. oatmeal,
uncooked
1/3 c. sugar
3 tsp. baking powder
1 tsp. salt
1 tsp.
nutmeg
1 tsp. cinnamon
1/2 mashed banana; optional

Beat egg; add
all other ingredients mixing just until moistened. Pour into greased muffin pan
(makes 12) filling cups 3/4 full. Bake at 400 degrees for 15-20 minutes or until
done.

Peaches 'n' Cream Bars

"If you are a peach pie fan, you will love these easy to make
bars with a crunchy almond topping."

Ingredients


    • 1 (8 ounce) packages refrigerated crescent
      dinner rolls


    • 1 (8 ounce) packages softened cream cheese
    • 1/2 cup sugar
    • 1/4 teaspoon almond extract
    • 1 (21 ounce) cans peach pie filling
    • 1/2 cup all-purpose flour
    • 1/4 cup packed brown sugar
    • 3 tablespoons cold butter
    • 1/2 cup sliced almonds
Directions

  1. Unroll crescent dough into one long
    rectangle, and press onto the bottom and slightly up the sides of a greased 13x9
    inch baking pan.
  2. Seal perforations.
  3. Bake at 375 degrees for 5 minutes, and cool
    completely on a wire rack.
  4. In a large bowl, beat the cream cheese,
    sugar, and extract until smooth, and spoon over crust.
  5. Spoon pie filling over cream cheese
    layer.
  6. In a small bowl, combine flour, and brown
    sugar. Cut in butter until the mixture resembles coarse crumbs.
  7. Stir in almonds, and sprinkle over peach
    filling.
  8. Bake at 375 degrees for 25-28 minutes or
    until edges are golden brown.
  9. Cool 1 hour, on a wire rack, and store in
    refrigerator.

Ingredients:


1 package yellow cake mix
1 stick butter,
softened
1 egg
1 cup chopped pecans
8 ounces cream cheese

eggs
1 box powdered sugar

Directions:
Mix
first 3 ingredients. Press batter into un-greased 9x13 pan. Press pecans into
batter.

Beat cream cheese, eggs, powdered sugar together until creamy.
Pour over batter.

Place pan on a cookie sheet. Bake at 350 degrees friend for
35-45 minutes until golden brown. Do not cut into squares until thoroughly
cooled.

Mardi Gras Doughnuts

Serves/Makes: 18 | Difficulty Level: 3 | Ready In: 30-60 minutes

Ingredients:
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 cup milk
2 eggs
1 pinch salt
1 teaspoon pure vanilla extract
oil, for deep frying
powdered sugar

Directions:
Mix the flour, sugar and baking powder together in a bowl. Make a well in the middle and add the eggs, milk, salt and vanilla. Beat these together and gradually work in the flour.

Roll out on a floured board to about 1/4 inch or a little thinner if preferred. Cut the dough into 2 x 4-inch strips and simply make 3 or 4 slits in the center of each.

Fry in deep oil until golden brown. Sprinkle with powdered sugar.

Cook's Notes: These will be firmer than doughnuts.

Ann Landers' Pecan Pie
1 Cup White Corn Syrup
1 Cup Dark Brown Sugar
1/3 Cup Melted Butter
1 Cup Pecans (heaping Cup)
3 Eggs, Beaten
Dash of Vanilla
Pinch of Salt


Mix ingredients well.
Pour into unbaked 9" pastry shell.
Bake at 350 degrees for 45-50 minutes.

Tropical dream Cake
What You Need
1can (20 oz.) DOLE Crushed Pineapple in Juice, undrained

1 pkg. (2-layer size) yellow cake mix

1 pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding

1-1/2 cups cold milk

2 cups thawed COOL WHIP Whipped Topping

1/2 cup BAKER'S ANGEL FLAKE Coconut, toasted

1/2 cup chopped PLANTERS Pecans

Make It

HEAT oven to 350ºF.
DRAIN pineapple, reserving 1 cup juice. Prepare cake batter as directed on package, substituting reserved juice for 1 cup of the water. Pour into greased 15x10x1-inch pan.

BAKE 15 to 18 min. or until toothpick inserted in center comes out clean. Cool completely.

BEAT pudding mix and milk with whisk 2 min. Stir in pineapple. Spread over cake; cover with COOL WHIP. Top with coconut and nuts. Keep refrigerated.

Almond Toffee Squares

1 cup (2 sticks) butter or margarine, softened
1 cup firmly packed brown sugar
1 egg
1 tsp. vanilla
2 cups flour
1/4 tsp. salt
2 pkg. (4 oz. each) BAKER'S GERMAN'S Sweet Chocolate, broken into squares
1/2 cup BAKER'S ANGEL FLAKE Coconut, lightly toasted *
1/2 cup PLANTERS Slivered Almonds, toasted


BEAT butter, brown sugar, egg and vanilla in large bowl. Stir
in flour and salt. Press onto bottom of greased 13x9-inch baking
pan.

BAKE at 350?friend for 30 minutes or until edges are golden brown.
Remove from oven. Immediately place chocolate pieces on top.
Cover with foil; let stand 5 minutes or until chocolate is
softened.

SPREAD chocolate evenly over entire surface; sprinkle with
coconut and almonds. Cut into squares while still warm; cool.

Makes 32 servings, 1 square each

* How To Toast Coconut and Almonds: Place coconut and almonds
in shallow baking pan. Bake at 350?friend for 8 to 10 minutes or
until lightly browned, stirring frequently.

"This is a Pampered Chef recipe. It's brownie on top with a yummy gooey pudding layer underneath. Fantastic with homemade ice cream!
Ingredients

  • Pudding
    • 1 cup all-purpose flour
    • 3/4 cup sugar
    • 3 tablespoons unsweetened cocoa powder
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/2 cup milk
    • 2 tablespoons butter, melted
    • 1 teaspoon vanilla
    • 1/2 cup chopped pecans or 1/2 cup walnuts
    Topping
    • 1 cup sugar
    • 1/4 cup unsweetened cocoa powder
    • 1 1/2 cups boiling water
Directions
  1. Preheat oven to 350°friend
  2. For pudding, combine all ingredients in a medium bowl; pour into greased 8-inch square baking dish.
  3. For topping, combine sugar and cocoa in a small bowl; gradually stir in boiling water.
  4. Pour over pudding. DO NOT STIR.
