Whats the point in them following me if I’m not a FT driver? What were they doing. Or watching for?

Perhaps the OP should have called the police ASAP.
Should have called the cops and let them handle it. Being aware of your surroundings is part of the methods. Confronting suspicious people is not.
I think that OP's mention of "them following me" implies that he knew the vehicle following him was management. So, calling cops probably not a good idea.
OP: You're brand new and in possession of tens of thousands of dollars worth of delivery vehicle and customer packages daily. It's nothing personal if management is out making sure you're doing fine.
In my area they're typically moving misloads between routes and shuttles if an air driver isn't available for it. Maybe observing new folks in between.
Here our On Roads are being forced to do S&V rides along with observations on seasonals.
They are not happy about it.
