We went out tonight for our anniversary (44 yrs) to a new French place in town. Excellent dinner.

I got to talking to the owner/chef, and told him that I liked to smoke meats. Told him what all I did, and mentioned that I wanted to get some pork belly to cure and smoke for bacon. Before we left, he brought out almost a full case of pork belly (at least 45 pounds) for me. He said that it won't sell here when he puts it on the menu. Looks like I have some work ahead of me.
