Housing prices are just skyrocketing out of control here. Our place is supposedly now worth 900k. It's no where near worth that much.

Is this the same everywhere?
My sister bought the house here for $350,000 in June 2019. According to Zillow, it's now worth $700,000. Soon there will be no poor people living in this city. As it is, most people work in this city and live elsewhere.

I just wish I was eligible to retire. I'd sell it in a heartbeat. Go buy a house somewhere else and still have like 500k left over lol.
That's what a lot of people have done here. They retired, sold their houses in NY and NJ, and came here to buy houses, cash in hand, causing housing to go crazy. If you look at a house here that goes on sale, and don't put a contract on it immediately, it's gone. Many houses are being bought with short closings and no inspections. They're being bought for $50,000, $100,000 or more over asking price,

I got that part. What I mean is my thermometer is reading 350° but when I touch the dome it's cold. Meaning all the ceramic inside hasn't soaked up the heat. So when I open it and put the food in it takes even longer to come back to temp.

Non-problem. It may cool down for a bit, but it will still come up. Be patient.

Nope. 900k buys you one heck of a home here. The buyers must earn big to afford those prices.

How's the middle class not leaving in droves?
