That is correct. Put them back in the smoker for another 45 min-1 hour. It is made from the point of the brisket. (the hump on top that has fat marbled in with the meat.)
I would kill to have some of your master BBQ burnt ends. Would be pinacle of my BBQ eating life. (And I eat a lot of BBQ) but then again. Evething I eat from there on out Iwould be disappointed with. .....double edged sword.
